Pancake experiment

I decided to experiment tonight with a pancake recipe. We had 1 overly ripe banana, as Jeremy calls them "prime banana bread bananas." Only problem, my banana bread recipe uses 2. So, I decided to make banana pancakes and add oats and chopped walnuts. They were so tasty! I'll share the recipe, since I made it up as I went along that way I'll have it somewhere for future reference.

Oatmeal Banana Nut Pancakes
1 1/2 cups Heart Smart Reduced Fat Bisquick
1/2 cup oats
1 cup skim milk
1 banana, mashed
1/4 cup egg beaters
10 walnut halves, chopped
dash vanilla
dash cinnamon

Mash banana, add wet ingredients and mix well. Add dry ingredients and fold together. Batter will be lumpy from banana. Spoon 1/4 cup pancake batter onto hot griddle and cook until bubbles form over top and edges are dry, flip and continue cooking until golden.

This made 9 pancakes using the 1/4 cup weight watchers serving spoon to spoon the batter onto the griddle. That makes them 3 points per pancake.

It would probably be really tasty if you added some chocolate chips to this recipe! The nuts are kinds weird in pancakes, so if you are a pancake purist, you might want to leave them out.

add some flax seed meal for omega 3's....we had apple cinnamon pancakes this morning...super yummy!
