Pancake experiment

I decided to experiment tonight with a pancake recipe. We had 1 overly ripe banana, as Jeremy calls them "prime banana bread bananas." Only problem, my banana bread recipe uses 2. So, I decided to make banana pancakes and add oats and chopped walnuts. They were so tasty! I'll share the recipe, since I made it up as I went along that way I'll have it somewhere for future reference.

Oatmeal Banana Nut Pancakes
1 1/2 cups Heart Smart Reduced Fat Bisquick
1/2 cup oats
1 cup skim milk
1 banana, mashed
1/4 cup egg beaters
10 walnut halves, chopped
dash vanilla
dash cinnamon

Mash banana, add wet ingredients and mix well. Add dry ingredients and fold together. Batter will be lumpy from banana. Spoon 1/4 cup pancake batter onto hot griddle and cook until bubbles form over top and edges are dry, flip and continue cooking until golden.

This made 9 pancakes using the 1/4 cup weight watchers serving spoon to spoon the batter onto the griddle. That makes them 3 points per pancake.

It would probably be really tasty if you added some chocolate chips to this recipe! The nuts are kinds weird in pancakes, so if you are a pancake purist, you might want to leave them out.

Busy bees over here

I really need to get into a better routine of writing in this blog and taking pictures of the kids. We will have some pictures this weekend, because it's Kaylin's 7th birthday! Seriously, how has it been 7 years since my baby girl was born? Anyway, I have been MIA because we are super busy over here.

I was recently appointed Hospitality Chair on the PTA at Kaylin's school. My first event was the Grandparent's luncheon for Grandparent's Day. It turned out really well and we had a great turn out. Success!

Also, Jeremy went to Missouri to visit family Thursday - Tuesday, so he just got home last night. He has a lot of pictures from that trip. I need to steal the memory card from him so I can put some of them up here. He had a lot of fun and was sad to return home, because that meant returning to work.

This weekend, we have Kaylin's birthday & party. The original plan was to have a bowling party. Last week, she changed her mind that she wanted to have a bounce house, which meant she could invite more of her friends. So, she invited her entire class, plus friends that aren't in her class this year. And we've been getting a daily countdown on how many days are left until her birthday. By the way, it's 3 as of this morning, if you were curious.

Last, but not least, as it's what I am swamped with, and have been planning over the last 4 months - my 10 year high school reunion. It's been fun planning it, for the most part, and it will be a fun evening and great to see everyone again, but man, I can't wait till it's over!

Yeah, I am pretty much at my limit right now. Hopefully next month I will be able to keep up better, at least with pictures if not blogging as well.

Kaylin's First Day of First Grade!

Kaylin started school on August 25th at a brand new school that's close enough for us to walk to! She complained the first day we walked home because it was 103 out. Whoops, ok, so mommy may have been a little excited about being able to walk. The next few times we walked with our neighbors. Nina is a 4th grader and the kids just love her! We think Jonathan has a crush on her. Of course, if it means walking with them Kaylin loves it!
